I doubled the cinnamon called for in the recipe, and added butter and vanilla to the maple syrup for some added yumminess. Nothing like having a few extra for the toaster oven the next morning, even though I probably won't redo the bananas for a weekday breakfast. I broke out the Flying Biscuit cookbook and made the oatmeal pancakes, too. I had some fresh peaches, so did the compote—used apple juice and brown sugar in which to cook the fruit. Tasty!
